Walnut Herb Pesto

My favourite part of the summer season is all the delicious local, fresh vegetables, fruit and herbs! This year, we planted a whole bunch of veggies and herbs on the side of the house and we're already reaping the benefits. This pesto is dairy-free, made with walnuts and freshly picked parsley and basil from our garden.

Ingredients:

  • 1 large handful basil
  • 1 large handful parsley
  • 1 clove of garlic
  • 1/4 cup olive oil
  • 1/3 cup chopped walnuts
  • 2 tbsp fresh lemon juice
  • Zest from half a lemon
  • 1/4 tsp sea salt

Directions: 

  1. Add all ingredients to a food processor and blend until combined.
  2. Enjoy!
